Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp turmeric powder
- 1 tsp black pepper
- 1 tbsp olive oil
- 1 cup cooked quinoa
- 1 cup chopped kale
- 1/2 cup diced cucumber
- 1/4 cup sliced red onion
- 1/4 cup chopped cilantro
- 1 tbsp lemon juice
- Salt to taste
Instructions
- Marinate chicken with turmeric, black pepper, olive oil, and salt for 30 minutes.
- Grill or pan-fry chicken until fully cooked, then slice.
- Assemble quinoa, kale, cucumber, red onion, and cilantro in a bowl.
- Top with sliced chicken.
- Drizzle lemon juice and serve.
