Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 1/2 cup apple cider
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 tsp cinnamon (for frosting)
  • 1/4 tsp nutmeg (for frosting)
  • 1 tbsp apple cider (for frosting)


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  3. Cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  4. Mix in apple cider, milk, and vanilla extract.
  5. Gradually add dry ingredients, mixing until just combined.
  6. Divide batter evenly among cupcake liners.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
  8. For frosting, beat butter until smooth. Gradually add powdered sugar, spices, and apple cider until creamy.
