Delicious oatmeal cookies infused with apple and cinnamon flavors, perfect for a healthy snack or dessert.
Ingredients
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1 tbsp coconut oil, melted
- 1/2 tsp vanilla extract
- 1/2 cup finely diced apple
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix oats, flour, baking soda, cinnamon, and salt.
- In another bowl, whisk honey, applesauce, coconut oil, and vanilla.
- Combine wet and dry ingredients, then fold in diced apple.
- Drop spoonfuls of dough onto the baking sheet and flatten slightly.
- Bake for 12-15 minutes until edges are golden.
- Cool on a wire rack before serving.
Notes
- Store in an airtight container for up to 5 days.
- For extra crunch, add chopped nuts.
- Substitute maple syrup for honey if preferred.
