Description
A refreshing arugula salad with a tangy lemon vinaigrette.
Ingredients
- 4 cups arugula
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
- 1/4 cup shaved Parmesan
- 1/4 cup toasted pine nuts
Instructions
- Wash and dry the arugula.
- In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
- Toss the arugula with the vinaigrette.
- Top with shaved Parmesan and toasted pine nuts.
- Serve immediately.
