Ingredients
- 1 cup black beans, rinsed and drained
- 1 ripe avocado, diced
- 6 small tortillas
- 1/2 cup shredded cheese
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 tbsp lime juice
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Press tortillas into a muffin tin to form cups.
- Bake for 8-10 minutes until crispy.
- Mash black beans with cumin, salt, and pepper.
- Mix avocado, tomatoes, cilantro, and lime juice in a bowl.
- Fill taco cups with black bean mixture.
- Top with avocado mix and shredded cheese.
- Bake for 5 minutes until cheese melts.
- Serve warm.
