Ingredients
- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 cup milk
- 1/4 cup honey or maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup chopped nuts or dried fruit (optional)
Instructions
- Preheat oven to 350°F. Grease a muffin tin.
- Mix oats, baking powder, cinnamon, and salt in a bowl.
- In another bowl, whisk milk, honey, egg, and vanilla.
- Combine wet and dry ingredients. Stir in optional mix-ins.
- Spoon batter into muffin cups.
- Bake 20-25 mins until set.
- Cool before removing from tin.
