Ingredients
- 2 cups carrots, peeled and chopped
- 2 cups parsnips, peeled and chopped
- 2 cups sweet potatoes, peeled and chopped
- 1 red onion, sliced
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Mix carrots, parsnips, sweet potatoes, and red onion in a large bowl.
- Drizzle with olive oil and balsamic vinegar.
- Sprinkle with salt, pepper, and thyme. Toss to coat evenly.
- Spread the vegetables on a baking sheet.
- Roast for 30-35 minutes, stirring halfway, until tender and caramelized.
- Serve warm.

- Cut vegetables into similar sizes for even cooking.
- Add other root vegetables like beets or turnips if desired.
