Ingredients

  • 2 cups carrots, peeled and chopped
  • 2 cups parsnips, peeled and chopped
  • 2 cups sweet potatoes, peeled and chopped
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix carrots, parsnips, sweet potatoes, and red onion in a large bowl.
  3. Drizzle with olive oil and balsamic vinegar.
  4. Sprinkle with salt, pepper, and thyme. Toss to coat evenly.
  5. Spread the vegetables on a baking sheet.
