Description

Soft and moist muffins packed with fresh berries and yogurt for a balanced breakfast or snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk egg, yogurt, oil, and vanilla.
  4. Combine wet and dry ingredients until just blended. Fold in berries.
  5. Spoon batter into muffin cups, filling each 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before removing from the tin.

Notes

  • Use fresh or frozen berries. If using frozen, do not thaw.
  • Overmixing the batter can make muffins dense.
  • Store in an airtight container for up to 3 days.
