Description
Soft and moist muffins packed with fresh berries and yogurt for a balanced breakfast or snack.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1 cup plain yogurt
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk egg, yogurt, oil, and vanilla.
- Combine wet and dry ingredients until just blended. Fold in berries.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from the tin.
Notes
- Use fresh or frozen berries. If using frozen, do not thaw.
- Overmixing the batter can make muffins dense.
- Store in an airtight container for up to 3 days.
