Description

Ingredients

400g Bread Flour

150g Mashed Frozen or Fresh Blueberries

100120g Water

100g Sourdough Starter (active)

8g Sea Salt

10g Honey

Olive Oil (for greasing)

1 Egg (for egg wash)


Instructions

1. Mix starter, blueberries, water, and honey in a bowl.

2. Add flour and salt, mix until a rough dough forms.

3. Knead by hand for 10 minutes until smooth.

4. Cover and rest for 30 minutes; stretch and fold once.

5. Let dough bulk ferment at room temp for 4–6 hours.

6. Divide into 6–8 pieces, shape into bagels.

7. Cold proof in fridge overnight.

8. Boil bagels 30 seconds per side.

9. Brush with egg wash and bake at 425°F for 20–22 minutes.

Notes

Frozen blueberries give a richer color.

For stronger flavor, add blueberry extract or freeze-dried berries.
