Description
A creamy pumpkin Alfredo pasta with rich brown butter and crispy pancetta for a comforting meal.
Ingredients
- 1 lb pasta
- 4 oz pancetta, diced
- 1/2 cup unsalted butter
- 3 garlic cloves, minced
- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp nutmeg
- Salt and pepper to taste
- Fresh sage for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a skillet, cook pancetta until crispy. Remove and set aside.
- In the same skillet, melt butter over medium heat until golden brown.
- Add garlic and sauté for 1 minute.
- Stir in pumpkin puree, heavy cream, nutmeg, salt, and pepper. Simmer for 5 minutes.
- Add Parmesan cheese and stir until melted.
- Toss cooked pasta in the sauce.
- Top with crispy pancetta and fresh sage.

- Use fresh pumpkin puree for best flavor.
- Adjust cream for desired sauce thickness.
