Description

A creamy pumpkin Alfredo pasta with rich brown butter and crispy pancetta for a comforting meal.


Ingredients

  • 1 lb pasta
  • 4 oz pancetta, diced
  • 1/2 cup unsalted butter
  • 3 garlic cloves, minced
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Fresh sage for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook pancetta until crispy. Remove and set aside.
  3. In the same skillet, melt butter over medium heat until golden brown.
  4. Add garlic and sauté for 1 minute.
  5. Stir in pumpkin puree, heavy cream, nutmeg, salt, and pepper. Simmer for 5 minutes.
  6. Add Parmesan cheese and stir until melted.
  7. Toss cooked pasta in the sauce.
  8. Top with crispy pancetta and fresh sage.
