Description
A creamy and comforting butternut squash soup perfect for cold days.
Ingredients
- 1 medium butternut squash (about 2 lbs), peeled and cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup coconut milk (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add butternut squash, vegetable broth, salt, pepper, cinnamon, and nutmeg.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until squash is tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in coconut milk if using, then heat for another 2 minutes.
- Serve warm.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For a spicier version, add a pinch of cayenne pepper.
