Description

A creamy and comforting butternut squash soup perfect for cold days.


Ingredients

  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup coconut milk (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add butternut squash, vegetable broth, salt, pepper, cinnamon, and nutmeg.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until squash is tender.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Stir in coconut milk if using, then heat for another 2 minutes.
  7. Serve warm.

Notes
