Description

A hearty and flavorful Cajun potato soup with a spicy kick, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, sliced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp butter
  • 2 tbsp olive oil


Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and celery. Cook until softened.
  3. Stir in Cajun seasoning and smoked paprika.
  4. Add diced potatoes and broth. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Use a potato masher to slightly thicken the soup.
  7. Stir in heavy cream and simmer for 5 minutes.
  8. Season with salt and pepper to taste.

Notes

  • For extra heat, add a pinch of cayenne pepper.
  • Garnish with green onions or shredded cheese.
  • Can be stored refrigerated for up to 3 days.
