Description
A hearty and flavorful Cajun potato soup with a spicy kick, perfect for chilly days.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, sliced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp butter
- 2 tbsp olive oil
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add onion, garlic, bell pepper, and celery. Cook until softened.
- Stir in Cajun seasoning and smoked paprika.
- Add diced potatoes and broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Use a potato masher to slightly thicken the soup.
- Stir in heavy cream and simmer for 5 minutes.
- Season with salt and pepper to taste.
Notes
- For extra heat, add a pinch of cayenne pepper.
- Garnish with green onions or shredded cheese.
- Can be stored refrigerated for up to 3 days.
