Description
A hearty and flavorful Cajun White Chicken Chili with tender chicken, creamy beans, and bold spices.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cans white beans, drained
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned on all sides. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until softened.
- Add Cajun seasoning, cumin, and paprika. Stir for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Return chicken to the pot. Simmer for 15 minutes.
- Shred chicken and add back to the pot.
- Stir in white beans and heavy cream. Simmer for 10 more minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh herbs.
Notes
- Adjust Cajun seasoning to taste.
- For extra heat, add diced jalapeños.
- Top with shredded cheese or sour cream if desired.
