Description

A fresh and healthy cauliflower salad with tahini dressing, perfect for a light lunch or side dish.


Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 2 tbsp water
  • 1/4 cup chopped parsley
  • 2 tbsp toasted sesame seeds


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and black pepper.
  3. Roast for 20-25 minutes until golden brown.
  4. In a bowl, whisk tahini, lemon juice, minced garlic, and water until smooth.
  5. Combine roasted cauliflower with tahini dressing.
  6. Garnish with chopped parsley and toasted sesame seeds.
  7. Serve chilled or at room temperature.

Notes

  • For extra crunch, add toasted almonds or pine nuts.
  • Adjust tahini dressing thickness with more water if needed.
  • Store leftovers in an airtight container for up to 2 days.
