Description
A fresh and healthy cauliflower salad with tahini dressing, perfect for a light lunch or side dish.
Ingredients
- 1 medium cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup tahini
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 2 tbsp water
- 1/4 cup chopped parsley
- 2 tbsp toasted sesame seeds
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and black pepper.
- Roast for 20-25 minutes until golden brown.
- In a bowl, whisk tahini, lemon juice, minced garlic, and water until smooth.
- Combine roasted cauliflower with tahini dressing.
- Garnish with chopped parsley and toasted sesame seeds.
- Serve chilled or at room temperature.
Notes
- For extra crunch, add toasted almonds or pine nuts.
- Adjust tahini dressing thickness with more water if needed.
- Store leftovers in an airtight container for up to 2 days.
