Ingredients
- 1 large head cauliflower
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 tbsp capers
- 1 garlic clove
- 1 lemon (zest and juice)
- 2 tbsp olive oil
- 1/4 tsp red pepper flakes
Instructions
- Preheat oven to 400°F.
- Trim cauliflower leaves and cut into 1-inch thick steaks.
- Brush cauliflower with olive oil, salt, and black pepper.
- Roast for 25 minutes until golden and tender.
- Blend parsley, cilantro, capers, garlic, lemon zest, lemon juice, olive oil, and red pepper flakes to make salsa verde.
- Spoon salsa verde over roasted cauliflower steaks.
