Ingredients
- 1 head cauliflower, cut into florets
 - 2 tbsp olive oil
 - 1 tsp cumin
 - 1 tsp paprika
 - 1/2 tsp salt
 - 1/2 tsp black pepper
 - 1/2 cup sour cream
 - 1 tbsp chipotle in adobo sauce
 - 1 tbsp lime juice
 - 8 small corn tortillas
 - 1/2 cup shredded lettuce
 - 1/4 cup diced red onion
 - 1/4 cup chopped cilantro
 
Instructions
- Preheat oven to 400°F (200°C).
 - Toss cauliflower florets with olive oil, cumin, paprika, salt, and pepper.
 - Spread on a baking sheet and roast for 25 minutes until tender.
 - Mix sour cream, chipotle sauce, and lime juice in a small bowl.
 - Warm tortillas in a dry skillet for 30 seconds per side.
 - Assemble tacos with roasted cauliflower, chipotle cream, lettuce, onion, and cilantro.
