Soft and chewy pumpkin oatmeal cookies packed with warm spices. Perfect for fall baking.
Ingredients
- 1 cup all-purpose flour
- 1 1/2 cups rolled oats
- 1/2 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a bowl, whisk flour, oats, cinnamon, nutmeg, baking soda, and salt.
- In another bowl, cream butter and sugars. Mix in pumpkin, egg, and vanilla.
- Gradually add dry ingredients to wet ingredients. Stir until combined.
- Drop tablespoon-sized dough onto the baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to 5 days.
- For extra chewiness, slightly underbake.
- Add chocolate chips or nuts for variation.
