A simple and delicious chicken taco casserole recipe that’s perfect for a quick weeknight dinner.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- 6 corn tortillas, cut into strips
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the shredded chicken, black beans, corn, salsa, and taco seasoning.
- Layer half the tortilla strips in a greased baking dish.
- Spread half the chicken mixture over the tortillas.
- Repeat the layers with the remaining tortillas and chicken mixture.
- Top with shredded cheddar cheese.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
- Garnish with sour cream and chopped cilantro.
Notes
- You can use rotisserie chicken for convenience.
- For extra heat, add diced jalapeños.
- Leftovers store well in the fridge for up to 3 days.
