Description
Wholesome, protein-packed cinnamon apple cottage cheese bites that are easy to bake and perfect for meal prep or snacking.
Ingredients
1 cup cottage cheese
1 cup rolled oats
1/2 cup applesauce or 1 grated apple
1 large egg
1/2 tsp cinnamon
1 tbsp honey or maple syrup (optional)
1/2 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F. Lightly grease or line a mini muffin tin.
2. Blend cottage cheese until mostly smooth.
3. Mix cottage cheese, applesauce, egg, honey/maple, and cinnamon.
4. Stir in oats, baking powder, and salt. Do not overmix.
5. Scoop into muffin tin, filling each ¾ full.
6. Bake 18–22 minutes until golden and springy.
7. Cool 5 minutes, then transfer to wire rack.
Notes
Store in fridge up to 5 days or freeze up to 2 months.
Customize with raisins, nuts, or chocolate chips.
Best served warm or with almond butter.
