Description

A hearty and comforting classic beef stew with carrots and potatoes, perfect for cold days.


Ingredients

  • 1.5 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 3 medium potatoes, cubed
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onion and garlic to the pot, sauté until softened.
  4. Stir in tomato paste, thyme, and rosemary.
  5. Return beef to the pot, add beef broth, and bring to a simmer.
  6. Cover and cook for 1.5 hours on low heat.
  7. Add carrots and potatoes, cook for another 30 minutes until tender.
  8. Season with salt and pepper, remove bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir in before serving.
  • Store leftovers in an airtight container for up to 3 days.
