Description

A timeless double-crust apple pie with warm cinnamon and nutmeg flavors.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, chilled and diced
  • 6-8 tbsp ice water
  • 6 cups thinly sliced apples (Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp unsalted butter (for topping)


Instructions

  1. Mix flour and salt in a bowl. Cut in chilled butter until crumbly.
  2. Add ice water 1 tbsp at a time until dough forms. Divide into two balls, flatten into disks, and chill for 1 hour.
  3. Preheat oven to 425°F (220°C). Roll out one dough disk into a 12-inch circle and place in a 9-inch pie dish.
  4. In a bowl, toss apples with sugar, lemon juice, cinnamon, and nutmeg. Pour into the crust.
  5. Dot with butter. Roll out the second dough disk, place over apples, and crimp edges.
  6. Cut slits in the top crust for venting. Bake for 45-50 minutes until golden.
  7. Cool for 2 hours before serving.

Notes

  • Use cold butter for flaky crust.
  • Prevent soggy crust by tossing apples with sugar and letting them sit for 15 minutes before baking.
