Ingredients

  • 4 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp sugar

  • 1/2 cup dry white wine
  • 6 cups beef broth
  • 1 bay leaf
  • 4 slices French bread, toasted
  • 1 1/2 cups grated Gruyère cheese


Instructions

  1. Melt butter with olive oil in a large pot over medium heat.
  2. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until deeply caramelized (about 45 minutes).
  3. Pour in wine and scrape the bottom of the pot to deglaze.
  4. Add beef broth and bay leaf. Simmer for 30 minutes.
  5. Discard the bay leaf and ladle soup into oven-safe bowls.
  6. Top each bowl with a slice of toasted bread and a generous layer of cheese.
  7. Broil for 2-3 minutes until the cheese is bubbly and golden.
  8. Serve hot.
