A fresh and nutritious chickpea salad perfect for clean eating.
Ingredients
- 2 cups cooked chickpeas
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse and drain the chickpeas.
- Combine chickpeas, cucumber, bell pepper, red onion, and parsley in a bowl.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Serve immediately or refrigerate for up to 2 days.
