Moist, protein-packed Cottage Cheese Banana Bread with almond flour, bananas, and a hint of maple. Perfect for breakfast or a healthy snack.
Ingredients
2 ripe bananas, mashed
3 eggs
1/2 cup cottage cheese
3 tablespoons maple syrup (adjust to taste)
2 teaspoons vanilla extract
2 1/2 cups almond flour
1 teaspoon baking soda
2 teaspoons cinnamon
Optional: walnuts, chocolate chips, blueberries
Instructions
1. Preheat oven to 350°F (175°C). Grease a loaf pan.
2. Mash ripe bananas in a large mixing bowl.
3. Add eggs, cottage cheese, maple syrup, and vanilla; whisk until smooth.
4. In a separate bowl, combine almond flour, baking soda, and cinnamon.
5. Fold dry ingredients into wet ingredients until just combined.
6. Add optional mix-ins and gently stir.
7. Pour batter into prepared loaf pan.
8. Bake for 45–55 minutes or until a toothpick comes out clean.
9. Let cool for 10–15 minutes in pan, then transfer to wire rack.
Notes
Store at room temperature for 3 days or refrigerate for up to 1 week.
Freeze individual slices for longer storage.
Blend cottage cheese for extra smooth texture.
Use very ripe bananas for best flavor.
