Light and fluffy Cottage Cheese Blueberry Cloud Bread perfect for low-carb diets. Protein-rich, easy to make, and delicious any time of day.
Ingredients
3 large eggs, separated
½ cup full-fat cottage cheese, drained well and blended until smooth
1 tablespoon cornstarch
¼ teaspoon cream of tartar
1 tablespoon powdered sweetener (optional)
½ teaspoon vanilla extract (optional)
½ teaspoon lemon zest (optional)
½ cup fresh blueberries
Instructions
1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
2. Drain cottage cheese thoroughly and blend until smooth.
3. Separate eggs; place whites in one bowl, yolks in another.
4. Mix cornstarch, sweetener, vanilla, and lemon zest into yolks. Fold in blended cottage cheese.
5. Beat egg whites with cream of tartar until stiff peaks form.
6. Gently fold egg whites into yolk mixture. Fold in blueberries.
7. Spoon mixture onto baking sheet in rounds or loaf shape.
8. Bake for 25–30 minutes until golden and puffed. Cool slightly before serving.
Notes
Store in airtight container in fridge up to 3 days.
Reheat gently in a low oven to maintain fluffiness.
Experiment with other berries or add spices for variation.
