Ingredients

1 cup 4% milkfat cottage cheese

¼ cup pure maple syrup

1 teaspoon vanilla extract

1 cup almond flour

2 tablespoons melted coconut oil

½ cup vanilla protein powder (plant-based)

½ cup chocolate chips (plus more for topping)


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment.

2. Blend cottage cheese until smooth and creamy.

3. In a bowl, mix cottage cheese, maple syrup, vanilla, and coconut oil.

4. Stir in almond flour and protein powder until a thick dough forms.

5. Fold in chocolate chips.

6. Scoop dough onto baking sheet and flatten slightly.

7. Top with more chocolate chips if desired.

8. Bake for 10–12 minutes until edges are set.

9. Cool on pan for 5 minutes, then transfer to wire rack.

Notes

Store cookies in an airtight container for 3 days at room temp or 1 week in the fridge.

Freeze extra cookies for up to 2 months.

Use oat flour instead of almond flour for a nut-free version.
