Ingredients

12 large eggs

1 lb turkey breakfast sausage, ground or removed from casing (or use chopped pre-cooked/frozen)

1 tsp olive oil

16 oz cottage cheese

1.5 cups sharp cheddar cheese, shredded

1/2 sweet onion, diced small

2 cloves garlic, minced

1 green bell pepper, diced small

1 red bell pepper, diced small

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Preheat your oven to 375°F (190°C).

2. Sauté the turkey sausage in olive oil, breaking it into crumbles. Drain excess fat.

3. In a large bowl, whisk the eggs until light and fluffy.

4. Fold in cottage cheese, cheddar, sautéed vegetables, salt, and pepper.

5. Combine with the cooked sausage and pour into a greased baking dish.

6. Bake uncovered for 35–40 minutes or until golden and set in the center.

7. Let cool slightly, slice, and serve.
