Ingredients
1 cup full-fat cottage cheese
¼ cup natural peanut butter (no sugar added)
2 tbsp sweetener (maple syrup, allulose, or monk fruit)
1 tsp vanilla extract
¼ tsp salt (optional)
1–2 tbsp milk or heavy cream (as needed for texture)
Optional Toppings:
2 oz dark chocolate chips
1 tsp coconut oil
Chopped peanuts for garnish
Instructions
1. Blend cottage cheese until smooth and creamy.
2. Add peanut butter, sweetener, vanilla, and salt. Blend until combined.
3. Adjust texture with milk or cream if needed.
4. Melt dark chocolate chips with coconut oil; stir until smooth.
5. Spoon mousse into serving bowls; drizzle with chocolate and top with chopped peanuts.
6. Serve immediately or chill for 20–30 minutes for thicker texture.

For the smoothest mousse, take time to blend the cottage cheese fully.
Use full-fat cottage cheese for best texture and flavor.
