Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 bell pepper, diced
- 1 small red onion, finely chopped
- 2 tomatoes, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- 1/3 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, bell pepper, red onion, tomatoes, avocado, cilantro, and jalapeño.
- In a small bowl, whisk olive oil, lime juice, cumin, salt, and black pepper.
- Pour the dressing over the vegetable mixture and gently toss to coat.
- Cover and refrigerate for at least 30 minutes before serving.
- Serve with tortilla chips or as a side salad.
