  • 1 small red onion, finely chopped
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/3 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, bell pepper, red onion, tomatoes, avocado, cilantro, and jalapeño.
  2. In a small bowl, whisk olive oil, lime juice, cumin, salt, and black pepper.
  3. Pour the dressing over the vegetable mixture and gently toss to coat.
