Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup pasta or rice
  • 1 cup spinach, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and diced tomatoes.
  5. Add thyme, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Add pasta or rice and cook until tender.
  8. Stir in spinach and cook for 2 more minutes.
  9. Serve hot.
