Delicious cranberry orange muffins with a perfect balance of sweet and tart flavors.
Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 1 cup fresh cranberries, chopped
Instructions
- Preheat oven to 375°F (190°C). Line muffin tin with paper liners.
- Mix flour, sugar, baking powder, and salt in a large bowl.
- In another bowl, whisk egg, milk, oil, vanilla, and orange zest.
- Combine wet and dry ingredients until just mixed.
- Fold in chopped cranberries.
- Spoon batter into muffin cups, filling 2/3 full.
- Bake for 18-20 minutes until golden brown.
- Cool for 5 minutes before transferring to wire rack.
Notes
- Use fresh cranberries for best results.
