Creamy Cottage Cheese Pasta is a quick, protein-packed comfort food made with simple ingredients and big flavor.
Ingredients
8 oz pasta
1 tbsp olive oil
1 cup diced onion (120g)
2 cloves garlic
1 lb ground turkey
2 cups red bell pepper (220g)
1 tsp dried basil
1/2 tsp red pepper flakes
3 packed cups spinach (90g)
Salt & pepper to taste
2 cups tomato pasta sauce
1 cup cottage cheese
Fresh basil & grated parmesan (optional)
Instructions
1. Cook pasta and set aside.
2. Sauté onion and garlic in olive oil.
3. Brown the ground turkey.
4. Add bell pepper, spices, and spinach.
5. Blend cottage cheese with pasta sauce.
6. Add sauce and pasta to skillet, mix well.
7. Top with basil and parmesan, then serve.
Notes
Make the sauce ahead and store separately for up to 4 days.
Add roasted garlic or lemon zest to the sauce for variation.
