Description

A rich and creamy lasagna soup with Italian sausage, ricotta, and herbs for a comforting meal.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 8 oz lasagna noodles, broken
  • 1/2 cup heavy cream
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • Salt and pepper to taste


Instructions

  1. Brown the sausage in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in tomatoes, broth, basil, oregano, and red pepper flakes.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Simmer until noodles are tender, about 15 minutes.
  6. Stir in heavy cream and ricotta until smooth.
