Description

A rich and creamy tomato basil soup that’s perfect for a cozy meal.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 1 tsp sugar
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add crushed tomatoes and vegetable broth. Simmer for 15 minutes.
  4. Blend the soup until smooth using an immersion blender.
  5. Stir in heavy cream, basil, sugar, salt, and pepper. Simmer for 5 more minutes.
  6. Serve hot with a garnish of fresh basil.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • You can add a pinch of red pepper flakes for a spicy kick.
