Description
A rich and creamy tomato basil soup that’s perfect for a cozy meal.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans (28 oz each) crushed tomatoes
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
- 1 tsp sugar
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add crushed tomatoes and vegetable broth. Simmer for 15 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in heavy cream, basil, sugar, salt, and pepper. Simmer for 5 more minutes.
- Serve hot with a garnish of fresh basil.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- You can add a pinch of red pepper flakes for a spicy kick.
- Store leftovers in the fridge for up to 3 days.
