Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper, then cook until golden brown (about 6 minutes per side). Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant (about 30 seconds).
  4. Add sun-dried tomatoes and cook for another minute.
  5. Pour in heavy cream and chicken broth, stirring well.
  6. Season with Italian seasoning and bring to a simmer.
  7. Return chicken to the skillet and cook until heated through.
  8. Stir in Parmesan cheese until melted.
  9. Add spinach and cook until wilted.
  10. Serve warm.
