Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup green chiles, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 8 flour tortillas
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cheddar cheese, shredded


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, sour cream, Monterey Jack cheese, green chiles, garlic powder, and cumin.
  3. Spoon the mixture evenly into the tortillas, roll them up, and place seam-side down in a baking dish.
  4. In a separate bowl, whisk together heavy cream, chicken broth, salt, and black pepper.
  5. Pour the sauce over the enchiladas.
  6. Sprinkle cheddar cheese on top.
  7. Bake for 25 minutes or until bubbly and golden.
