Ingredients
- 2 cups cooked chicken, shredded
- 1 cup sour cream
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup green chiles, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 8 flour tortillas
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cheddar cheese, shredded
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix shredded chicken, sour cream, Monterey Jack cheese, green chiles, garlic powder, and cumin.
- Spoon the mixture evenly into the tortillas, roll them up, and place seam-side down in a baking dish.
- In a separate bowl, whisk together heavy cream, chicken broth, salt, and black pepper.
- Pour the sauce over the enchiladas.
- Sprinkle cheddar cheese on top.
- Bake for 25 minutes or until bubbly and golden.
Notes
- Use rotisserie chicken for extra flavor.
- Adjust spice levels by adding more or less green chiles.
