Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese frosting


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk flour, baking powder, baking soda, salt, and pumpkin pie spice in a bowl.
  3. Cream butter, brown sugar, and granulated sugar until fluffy. Mix in pumpkin puree, egg, and vanilla.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Scoop dough onto baking sheet, spacing 2 inches apart. Bake for 10-12 minutes.
  6. Let cookies cool, then pipe cream cheese frosting onto each.
