Description

Ingredients

  • 500g Brussels sprouts, trimmed and thinly sliced
  • 1 apple, cored and thinly sliced
  • 50g walnuts, roughly chopped
  • 50g dried cranberries
  • 50g feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste


Instructions

  1. Wash and thinly slice the Brussels sprouts.
  2. Core and thinly slice the apple.
  3. Roughly chop the walnuts.
  4. In a large bowl, combine Brussels sprouts, apple, walnuts, and cranberries.
  5. Whisk together olive oil, lemon juice, honey, salt, and pepper.
  6. Pour the dressing over the salad and toss to coat.
  7. Sprinkle with crumbled feta before serving.
