Description
A fresh and crunchy Brussels sprouts salad with a tangy dressing. Perfect as a side dish or light meal.
Ingredients
- 500g Brussels sprouts, trimmed and thinly sliced
- 1 apple, cored and thinly sliced
- 50g walnuts, roughly chopped
- 50g dried cranberries
- 50g feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and thinly slice the Brussels sprouts.
- Core and thinly slice the apple.
- Roughly chop the walnuts.
- In a large bowl, combine Brussels sprouts, apple, walnuts, and cranberries.
- Whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Sprinkle with crumbled feta before serving.
Notes
- Slice Brussels sprouts as thinly as possible for best texture.
- Add the dressing just before serving to keep the salad crisp.
- Substitute pecans for walnuts if preferred.
