Description
A refreshing and light salad combining crisp cucumbers with sweet strawberries, perfect for a summer side dish.
Ingredients
- 2 cups cucumbers, sliced
- 1 cup strawberries, sliced
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh mint, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and slice cucumbers and strawberries.
- Thinly slice red onion and chop fresh mint.
- In a large bowl, combine cucumbers, strawberries, red onion, and mint.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
- Pour dressing over the salad and toss gently to coat.
- Serve immediately or chill for 30 minutes before serving.
Notes
- For best results, use fresh, ripe strawberries.
- Add feta cheese for extra flavor if desired.
- Store leftovers in an airtight container in the fridge for up to 2 days.
