Description

A fresh, colorful salad featuring cucumbers, bell peppers, and a zesty homemade dressing. Perfect for light meals or potluck side dishes.


Ingredients

2 large cucumbers, thinly sliced

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced thin

1 orange bell pepper, sliced thin

½ red onion, very thinly sliced

2 tablespoons fresh dill, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon lemon juice

1 teaspoon honey

Salt and pepper to taste


Instructions

1. Slice cucumbers, bell peppers, and red onion. Place in a large bowl.

2. In a small bowl, whisk olive oil, vinegar, lemon juice, honey, salt, and pepper.

3. Pour vinaigrette over vegetables and toss well.

4. Add chopped dill and mix gently.

5. Refrigerate for 30–60 minutes to chill and let flavors meld.

6. Serve cold with optional garnishes or pairings.

Notes

To keep cucumbers extra crisp, toss with dressing just before serving.
