Ingredients
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup light corn syrup
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1/4 tsp citric acid (optional for extra tartness)
Instructions
- In a saucepan, combine sugar, water, and corn syrup.
- Heat over medium heat, stirring until sugar dissolves.
- Add lemon juice and zest. Bring to a boil without stirring.
- Cook until mixture reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from heat and stir in citric acid if using.
- Pour onto a parchment-lined baking sheet. Let cool completely.
- Break into pieces and store in an airtight container.
