Description

A delicious Easter frittata packed with fresh spinach and tangy feta cheese.


Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup milk
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add spinach and cook until wilted, about 2 minutes.
  4. In a bowl, whisk eggs, milk, salt, and pepper.
  5. Pour egg mixture over spinach in skillet.
  6. Sprinkle feta cheese evenly over the top.
  7. Cook without stirring for 3 minutes.
  8. Transfer skillet to oven and bake for 15-20 minutes until set.
  9. Let cool slightly before slicing.

Notes

  • Use fresh spinach for best results.
  • Feta can be substituted with goat cheese.
