Ingredients
- 1 large cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill, chopped (optional)
Instructions
- In a large bowl, combine cucumber and red onion slices.
- In a small bowl, whisk together rice vinegar, olive oil, honey, salt, and pepper.
- Pour the dressing over the cucumber mixture and toss gently to coat.
- Sprinkle with fresh dill if desired.
- Serve immediately or refrigerate for up to 30 minutes for best flavor.

- For extra crunch, add 1/4 cup toasted sesame seeds.
- Use English cucumbers for fewer seeds and less water content.
