Ingredients
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 tbsp butter
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced onion
Instructions
- In a large pot, melt butter over medium heat.
- Add carrots, celery, and onion. Cook until softened.
- Pour in chicken broth and bring to a simmer.
- In a bowl, mix flour, baking powder, salt, and pepper.
- Stir in milk to form a dough.
- Drop spoonfuls of dough into the simmering broth.
- Add shredded chicken and thyme.
- Cover and simmer for 15 minutes until dumplings are cooked.
- Serve hot.
Notes
- Use leftover rotisserie chicken for convenience.
- Adjust broth thickness by adding more or less flour.
- Store leftovers in the fridge for up to 3 days.
