Description
A hearty and simple cornbread casserole that combines savory flavors with a crispy cornbread topping.
Ingredients
- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) creamed corn
- 1 box (8.5 oz) cornbread mix
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 egg
- 1 small onion, diced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef and onion in a skillet, then drain excess fat.
- Stir in both cans of corn, salt, and pepper.
- Spread mixture in a greased 9×13-inch baking dish.
- In a bowl, mix cornbread mix, milk, and egg until combined.
- Pour cornbread batter over the beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes until golden and set.
- Let cool for 5 minutes before serving.
Notes
- Use lean ground beef for less grease.
- Add diced jalapeños for extra spice.
- Store leftovers in the fridge for up to 3 days.
