Ingredients

  • 6 cups peeled and diced potatoes
  • 1 medium onion, chopped
  • 3 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons chopped green onions


Instructions

  1. Place potatoes, onion, broth, salt, pepper, garlic powder, and thyme in the crockpot.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  3. Use a potato masher to slightly mash the potatoes for a thicker texture.
  4. Stir in heavy cream and cheddar cheese until melted.
  5. Serve hot, topped with crumbled bacon and green onions.
