Description
A simple and quick pasta salad with eyeball-shaped mozzarella for a fun twist. Perfect for Halloween or themed parties.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup mini mozzarella balls (bocconcini)
- 1/4 cup red onion, finely diced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8-10 pitted black olives (for eyeball garnish)
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, cherry tomatoes, sliced olives, mozzarella balls, and red onion.
- In a small bowl, whisk olive oil, balsamic vinegar, salt, and pepper. Pour over the pasta mixture and toss.
- To make eyeballs, press a small piece of black olive into each mozzarella ball.
- Chill for at least 30 minutes before serving.
Notes
- Use gluten-free pasta if needed.
- Add cooked chicken or shrimp for extra protein.
- Best served cold.
