Description
A simple, comforting soup made with ham, potatoes, and vegetables in one pot.
Ingredients
- 2 tbsp butter
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups diced potatoes
- 2 cups diced ham
- 4 cups chicken broth
- 1 cup milk
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add potatoes, ham, and chicken broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until potatoes are tender.
- Stir in milk, salt, and pepper. Cook for 5 more minutes.
- Serve warm.
Notes
- Use leftover ham for best flavor.
- Store leftovers in the fridge for up to 3 days.
- Add more broth if the soup is too thick.
