Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 cup chopped spinach
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Whisk eggs and milk in a bowl, then season with salt and pepper.
- Divide the veggies and cheese evenly among the muffin cups.
- Pour the egg mixture into each cup, filling 3/4 full.
- Bake for 20-25 minutes until eggs are set.
- Let cool, then store in the fridge for up to 5 days.
