Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups diced apples
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
- In a bowl, whisk flour, sugars, baking powder, cinnamon, and salt.
- In another bowl, mix melted butter, eggs, milk, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fold in diced apples.
- Spoon batter into muffin cups, filling 3/4 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
